This satisfying, cheesy, herby bake is perfect for lunch, or as a side to red meat. It’s super easy to make, and a great alternative to chips or mashed potatoes.
- 2 potatoes
- 1 tsp of dried Rosemary
- 1 tbsp butter
- 1 red onion
- 4 tbsp parmesan
- 1 egg
- 2 tsp black pepper
- Start off by grating the potato, then boiling for a short time – about 4 minutes, until they’ve softened off. Make sure you rinse them well with cold water afterwards, then drain them and squeeze the water out in a sieve.
- Preheat the oven to 200 degrees celsius, then whack the butter in a pan, heat it up until the moment it melts, then finely chop the red onion and fry, alongside the Rosemary.
- Next, combine the red onion with the potato, and add your salt and pepper. Put it all in a Pyrex dish, then add your egg and mix.
- Pop it in the oven, and cook for around 20 minutes, until it’s crispy on top. Next, add the parmesan, and cook until that is crispy too. Delicious
