This is a nicely spiced noodle soup recipe, packing loads of great Japanese flavours. You’ll need a fair few ingredients but it’s well worth it.
What you need:
- Soy Sauce
- 1/2 a tsp. Chinese 5 Spice
- 1 1/2 Thumbs size of Ginger
- 4 Cloves Garlic
- 2-3 Red Chillis
- Ramen or fine egg noodles
- 2 tbspSesame Oil
- 1tbsp. Olive Oil
- 1 tsp. Honey
- Sesame Seeds
- 1 tsp. Worcestershire sauce
- 1 pint of chicken stock
- 1 Carrot
- 1 Pepper
- 2 Shallots
- Salt and pepper
- Teaspoon of sugar
- 3 Chicken Breasts
First, chop up then marinate 3 chicken breasts in a tablespoon of soy sauce, a chilli, 1/2 a thumb of ginger, a teaspoon of honey, a tablespoon of olive oil, a little sesame oil and a clove of garlic, and leave for as long as possible.

Once the marinade’s worked its magic, peel your whole carrot and slice the shallots and red pepper. Fry these for about one minute in a mix of olive and sesame oil. Then remove it from the pan.
Leave the oil in the pan, or add a little if need be, then fry the chicken in the same pan. Now would be a good time to boil up the noodles.

Next, make a mix of:
- 2 roughly chopped garlic cloves,
- 1/2 a thumb of ginger,
- 1/2 a tsp. of 5 spice,
- The Worcestershire sauce,
- 2-3 tablespoons of soy sauce
- Another chilli or two.
In a new pot, add this mix to the pint of stock, with another 200 (ish) mls. of water, then heat this up to a simmer and leave for a couple of minutes, then add the veg you fried earlier.
Next, add the chicken and noodles to the mix.

Put it in a warmed bowl, and cover in sesame seeds and spinach.
