Chicken, Chilli and Ginger Stir Fry Recipe

This stir fry is the result of a long period of trial and improvement, and although it’s got a lot of ingredients, it’s easy to make and really is a bit special. Also can be made with egg replacing chicken, which will be explained below.

Ingredients (to serve 2):

Essential Veg: Carrot, Cabbage, Spring Onion, Pepper

Non Essential Veg: Celery, Beansprouts, Mushrooms, Courgette, Sweetcorn, basically anything crunchy that you like.

To add during cook:

  • Fresh Coriander
  • Light soy sauce
  • Tablespoon olive oil
  • Egg noodles
  • A shake of Chinese 5 spice
  • Half a thumb sized piece of Ginger
  • A clove of garlic

To top:

  • Sesame seeds
  • 2 segments of lime
  • Cashews (optional)
  • Optional to replace chicken: 2 x 2 egg omelettes

Method:

At least an hour before cooking, cut chicken into centimetre thick strips and combine with marinade ingredients.

 Now chop up all of the veg, along with the extra ginger, garlic and chilli. Boil water for noodles too if you’re using dry ones.

It’s time to cook! Firstly, fry the chicken, it shouldn’t need any oil and will cook in about 5 minutes.

Now remove chicken from the pan (but leave the juices), add a little olive oil, turn up heat and stir fry all veg for around 2 minutes. Now’s when you should start the omelette if you’re having one.

Next, return the chicken to the pan and add the 5 spice with a good squeeze of lime. Cook noodles if dried.

Now add coriander and noodles, heating for around a minute. Now’s the time for cashews if you’re using them.

Plate it up as soon as possible, noodles below and veg on top. Add light soy sauce to taste (Just under 1tbsp. per person).

To serve, top it with some sesame seeds and a light drizzle of sesame oil, a good wedge of lime to the side is also essential.
